Blended from barrels aged anywhere from 4 to 12 years.Pipe Dream Bourbon opens with an inviting bouquet of rich maple syrup, warm vanilla bean, and golden honey layered effortlessly together. As the whiskey settles in the glass, deeper aromas of caramelized sugar, toasted oak, and light brown butter begin to emerge, creating remarkable depth and warmth. Hints of baked pastry, soft cinnamon, and faint roasted nuts linger in the background, giving the nose a luxurious and comforting character that continuously evolves with each pass. The palate is exceptionally rich, full-bodied, and beautifully layered. Initial waves of velvety vanilla and dark caramel coat the tongue before unfolding into notes of dried apricot, roasted pecan, and toasted oak. The oak influence is assertive yet refined, delivering a deeply charred barrel character balanced by sweet baking spices and subtle molasses undertones. Emerald Giant redwood is 1,180 years old and stands 359 ft tall. First, this paired beautifully with a fresh salad dressed in a lovely homemade vinaigrette, the bright acidity and delicate herbs of the dressing complementing the whiskey’s rich sweetness and spice surprisingly well. The contrast between the crisp greens and the warm, layered character of the pour created a balance that elevated both the nosh and the dram gracefully. 

 

The nose immediately opens with an assertive wave of classic rye spice, layered beautifully with fresh pine cone and vibrant bursts of orange and lemon peel. Beneath the herbal and citrus-forward character lies soft caramel and light oak that add depth and complexity. On the palate, the whiskey delivers a wonderfully balanced interplay of warming rye spice, crushed cinnamon sticks, and fresh ginger, all rounded out by rich caramel and creamy vanilla. Notes of ripe orchard fruit and candied citrus emerge mid-palate, while a silky, almost buttery viscosity gives the pour a luxurious mouthfeel that coats the tongue exceptionally well.

On the palate, the whiskey immediately delivers a bold wave of caramel and vanilla before transitioning into a lively rye spice that gives the pour its backbone. This expression is named after the mighty Van Duzen River carving its course through 429 vibrant square miles of countless redwood groves. The aroma opens with inviting waves of creamy vanilla and rye spice, layered alongside freshly baked bread and warm malt character. Subtle hints of milk chocolate emerge in the background. Rich and pleasantly malty on the palate, the whiskey delivers notes of chocolate-covered malt, cracked black pepper, and rye spice. Vanilla notes round out the sip, while bready and dough-like undertones create a comforting, almost bakery-inspired depth that gives the pour a rustic charm. The finish is short to medium in length, fading with lingering impressions of toasted malt, gentle spice, and soft milk chocolate. This was quite the pleasure to taste one especially of its scarcity

This Still Austin Whiskey barrel select is not just some random bottle that wandered into Ron’s Corner Tavern looking for attention. This one has a story. Nancy personally selected this barrel/blend, which means it already came into the bar with better credentials than half the people sitting there.

 

It is aged three years, which in whiskey years means it is still young enough to make questionable decisions, but old enough to have a little class while doing it.

 

When it first hits the glass, there is this mineral-spirit effervescence that starts waking up like it just heard its favorite song on the jukebox. Let it sit for a bit, and it starts changing on you. What begins with that lively mineral note slowly turns into more of a maple syrup character. Basically, it starts the night wearing boots and ends the night slow dancing.

 

The flavor is loaded with luscious caramel, nutmeg, and subtle hints of freshly cut oak. Then the mouthfeel shows up, and this is where things get interesting. It is elegant, but it is also an ass-whipping. Heavy vanilla, cedar, spice, and that sharp edge all come together like a beautiful woman who smiles at you right before she tells you exactly what you did wrong.

 

There is a big spice note in here too, almost leaning toward Scotch territory. Nutmeg, heavy spice, cedar, and this earthy forest-floor thing that makes you feel like you should be wearing a tweed jacket while also knowing you are probably about to say something stupid.

 

This whiskey is like a crazy lover who somehow becomes your wife. Still exciting. Still unpredictable. Still capable of starting a fight over nothing. But somehow, at the end of the day, grounding, comforting, and exactly where you want to be.

 

Nancy picked a damn good barrel. This pour has attitude, flavor, and just enough danger to make you respect it. So if you are at Ron’s Corner Tavern, ask for the Still Austin Barrel Select. Just don’t blame Nancy if it makes you text someone you probably should not.
